It is almost 1am, but for the past few nights it has hit 1am and I've never gotten around to blogging so I can't let that happen again tonight! I am too behind! Christmas is burying me hook, line and sinker this year. Actually, that is not true. The responsibilities that come along with Christmas have caught me by surprise this year; not necessarily because I wasn't expecting them...just because they are more time consuming than I thought. Now it sounds exciting. But it's really not - just cookie baking and gift buying and gift wrapping and Advent planning (Calla likes an Advent-related activity every day...I started this a couple years ago and now I am wondering whyyyyy) and throw in the stomach flu (Jay) this week and you've got = a mountain of laundry and a layer of dust. I feel like I can be on top of housework or Christmas stuff and not both!
Okay well, that is all very unrelated to this post. Except, perhaps, as a disclaimer to say why I am so behind. The last time I wrote we were excitedly preparing for the arrival of Jon and Kim.
And arrive they did - at 11:30pm or so on the Monday evening before Thanksgiving.

Kim and Jon and Ellie and Charlotte settled in at our house. We were so happy to share our little space with them, and as little as it is ("cozy") they didn't seem to mind knocking elbows and tripping over toys.

Tuesday the kids woke up and they were so happy to see their cousins! They even got a little playtime in before I had to run out to take Calla to school. Poor Calla! Missing out on all the fun! She handled it ok.
I told her we wouldn't do anything exciting while she was gone, although that was a lie. I can't think of anything more exciting than a redone bathroom!
Jon and Kim brought with them a mountain of supplies and equipment. I can't imagine the amount of time/space/planning it must have taken to fit it all in the minivan, and then to unpack it and repack it. Yikes.
Tuesday morning, Jon got right to work!

we had some lunch on Monday and then headed out to Home Depot for some supplies that Jon needed. And when I say "we" I mean Aunt Kimberly and I and our five children. Because who doesn't want to take five small children along on shopping trips?

Monday when we got back Jon was painting the bathroom. Bless his heart.
The little kids took naps. At some point I went to school and picked up Cal-Cal.

Tuesday evening the kids played a bit after dinner and Jon kept working until he dropped into bed! Almost literally! Kim and I stayed up and visited and held Charlotte and then she went to bed too.
Wednesday we had two big projects going on - finish the bathroom! AND make Thanksgiving dinner! Haha! No big thang!

I prepared the pecan sweet potato casserole, make-ahead mashed potatoes (thank you Mimi for the delicious recipe!) and two desserts (pumpkin cake) and chocolate peanut butter pie. Oh you want the recipes? Here you go:
DO-Ahead Mashed Potatoes
9 medium potatoes
3/4 cup milk
1/2 cup whipping heavy cream
1/2 cup butter
1 tsp salt
1/8 tsp pepper
Directions:
1 Scrub potatoes. Leave skins on, if desired, or peel thinly and remove eyes. Cut into large pieces. Heat 1 inch water (salted if desired) to boiling in 3-quart saucepan; add potato pieces. Cover and heat to boiling; reduce heat. Cook covered 20 to 25 minutes or until tender; drain. Shake pan gently over low heat to dry potatoes.
- 2 Heat milk, whipping cream, butter, salt and pepper in 1-quart saucepan over medium-low heat, stirring occasionally, until butter is melted. Measure out 1/4 cup of the milk mixture; cover and refrigerate.
- 3 Add remaining milk mixture in small amounts to potatoes in medium bowl, mashing with potato masher or electric mixer after each addition. (Amount of milk needed to make potatoes smooth and fluffy depends on kind of potatoes used.) Beat vigorously until potatoes are light and fluffy.
- 4 Spray 2-quart casserole with cooking spray. Spoon potatoes into casserole. Bake immediately, or cover and refrigerate up to 24 hours.
- 5 Heat oven to 350ºF. Pour reserved milk mixture over potatoes. Bake uncovered 40 to 45 minutes or until potatoes are hot. Just before serving, stir potatoes.
Pumpkin Sheet Cake

- 2 sticks Salted Butter
- 2 cups Pumpkin Puree (not Pumpkin Pie Filling!)
- 2 teaspoons Pumpkin Pie Spice
- 3/4 cups Boiling Water
- 2 cups Flour
- 2 cups Sugar
- 1/4 teaspoon Salt
- 1/2 cup Buttermilk
- 2 whole Eggs
- 2 teaspoons Baking Soda
- 2 teaspoons Vanilla Extract
- 1/2 teaspoon Maple Extract (optional)
- FROSTING
- 8 ounces, weight Cream Cheese, Softened
- 1 stick Butter, Softened
- 1 pound Powdered Sugar, Sifted
- Dash Of Salt
- 1 Tablespoon Half-and-half Or Milk (more If Needed For Thinning)
Preparation Instructions
Preheat oven to 350 degrees. Spray a sheet pan with baking spray and set aside.
In a medium saucepan, melt 2 sticks butter. Whisk in pumpkin and pumpkin pie spice until it's totally combined. Whisk in boiling water until mixture is smooth and combined. Set aside.
In a measuring pitcher, combine buttermilk, eggs, baking soda, vanilla, and maple extract. Whisk and set aside.
In a large bowl, combine flour, sugar, and salt. Pour in the pumpkin mixture and stir until halfway combined. Pour in the buttermilk mixture and stir until combined. Pour into the pan and bake the cake for 20 minutes. Remove and allow to cool.
To make the frosting, mix together the cream cheese, butter, powdered sugar, and salt until smooth. Add half and half and check the consistency. It should be somewhat thick but thin enough to spread in a thin layer.
Spread the frosting all over the surface of the cake. Cut into squares and serve. Keep leftovers in the fridge, as frosting will get soft.
NOTE: You may double the frosting amounts if you like a very thick layer of frosting!

1 cup creamy peanut butter
1 cup powdered sugar
1 (8 oz) package cream cheese, softened
1 (12 oz) container of Cool Whip, slightly thawed
Bake your pie crust until browned (per box directions or homemade recipe directions) or use a graham cracker crust. Set aside.
In a mixing bowl, beat with an electric mixer the peanut butter, powdered sugar, and cream cheese until smooth. Fold the Cool Whip in with a spoon.
Pour the peanut butter filling into the prepared pie crust and refrigerate at least two hours before slicing and serving.

JOn needed Kimberly's help cutting the tile (! - Kimmi can do anything!) and so I watched the kiddos. They played really nicely.
Calla had Grandparents Day at school on Wednesday afternoon so Opa went with her. I will have to post the picture I have of the two of them. He kindly drove her home too so I didn't even have to leave the house to pick her up.
Jon and Kim took a late-afternoon trip for some supplies from Home Depot and I got the HONOR of feeding Charlotte her first-ever bottle! Write that in the baby book!

Thankfully after all that cooking, I didn't have to fuss with dinner. I had baked mostaccioli in the freezer so we ate that for dinner.
After dinner we decided to get everyone squeaky clean in honor of Thanksgiving Eve.
After baths the kids went to bed!
Then the adults got back to work! Kim and I painted the doors in the bathroom. It was fun!

It's too bad we finished painting before the real artist showed up! Brie and Caleb rolled in at about 10:30, just in time for dinner. Well, not really, but we had leftovers ready!

Wednesday night everyone settled into bed and I stayed up past 1 getting things ready. I had floors to clean and a table to set and clutter to de-clutter!
I hope not to wait another week before posting! Tomorrow I will finally put up all the Thanksgiving pics. And also the "after" shots of the bathroom!
